If you are traveling this December, I would suggest you go to Boracay, Island in the Philippines. Since this is a tropical country, there won't be winter in this place and the climate is great! Boracay is a white sand beach and there are so many hotels that would cater to your needs. It is the best Island in the Philippines and it is often visited by so many tourists. It may not be in the Caribbean but it can be as nice as in Caribbean, too.Link: The Best Caribbean Island?; Luxury Vacation

So this will be considered a peak season. Some hotels offer a big discount if you could book your stay at least two months before your arrival.
